Masala Sandwich | Iyengar bakery style

Sometimes cravings can be maddening! Especially during those bitter cold wintry days! I was reminded of this sandwich that is usually stacked up in our very own indigenous Iyengar bakery back home. I never knew it was so simple and the fact that it is diminutively time consuming! It was a total delight :)

Whole wheat bread/ plain white bread loaves
Carrot, grated
1 cup
Green Chilli 2
Red Chilli Powder 1 tsp
Mustard 1 tsp
Oil 3 tbsp
Salt As needed

  1. In a skillet heat oil and add the mustard seeds, once it starts spluttering add the hing/ asafoetida

  2. Now add the onions saute them until transparent

  3. Add the grated carrot and red chilli powder
  4.  Mix them together and allow it to cool

  5. On another skillet, toast the bread on either sides adding a few drops of ghee/ butter

  6. Spread the mixture on the bread and enjoy it while its crisp and hot.
